Meat that deserves the name.
Good meat needs three things: honest origins, time, and René. Seared outside, butter-tender inside. Changing cuts. And the courage to try something new – right in Coburg's old town.
True Wilderness – Premium Dry Aged
The name sounds far-flung, but the meat comes from German cattle. True Wilderness is based in Friesoythe in the Oldenburg region and was founded in 2012 by master butcher and meat technologist Rico Schlegel. The meat ages on the bone for several weeks in ventilated chambers until the nutty dry-aged flavour develops.
Metzgerei Max from Hof
A family butcher in its fourth generation: pasture-raised beef from the Franconian Forest, straw-bedded pigs from local farmers, named “Butcher of the Year” by Feinschmecker magazine. This is where, for example, the ribs for our rib nights come from.

Cut of the week
Whatever special cut our supplier has right now ends up on René's board. Something different every week, so it never gets boring – just ask.
René's signature
Seared hard on the outside, butter-tender inside. Not simple, not fussy – with an enormous amount of flavour.
