Caviar. No compromises.

Simply because it's good – and sometimes in life you just say yes.

We serve AKI caviar from Hamburg, a family house since 1925. Classic, on ice, with a mother-of-pearl spoon.

All about caviar

Open tin of AKI Siberian caviar on ice
  • Trout

Large orange pearls. Fresh, snappy – the way in.

  • Siberian

Siberian sturgeon, Germany. Clear, fine, pure.

  • d'Aquitaine

    Siberian sturgeon, France. Lightly nutty.

  • Ossetra

Russian sturgeon, Germany. Nutty, creamy, intense.

  • Golden Queen

    Mandarin Imperial. Firm, golden-brown pearls.

Feeling a little crazy? Try it on Davide's vanilla ice cream. Unbelievable!

18:30Oysters

Rough in character, soft at heart.

Our oyster is called Oysrí, Irish for “oyster”. A rock oyster from Dungarvan Bay on Ireland's south coast. Salty, mineral, with a slightly sweet finish. Not a delicacy for the rich – one for the curious.

Fresh or not at all: our oysters arrive every other day and are served on day one and two. When they're gone, they're gone. Best to ask whether we have them today.

All about oysters

Oysrí oyster on ice with lemon in front of the wooden sign “Oysrí – rough in character, soft at heart”

Your first oyster, in three steps.

  1. Smell it. It should smell of the sea, not of fish. Then all is well.
  2. Slurp it, together with the water in the shell. Lemon? You can, you don't have to.
  3. Chew briefly. Only then do you taste the bay it comes from.

Our house recommendation. Lisa is happy to explain at the table.

Freshly opened oysters on ice with lemon
~190 lof water an oyster can filter a day. Maximum value.
3–4years it grows before it lands on your plate (according to the grower).
1bay you can taste. Merroir, like terroir in wine.

A small menu. A lot of love.

Not simple, not fussy. Huge flavour, and a new idea every three to four weeks. Right now, for example:

19:45The best cut

Meat that deserves the name.

Good meat needs three things: honest origins, time, and René. Seared outside, butter-tender inside. Changing cuts. And the courage to try something new.

More about our meat

Steaks with prawns, plated at the pass
Dry aged

True Wilderness

Sounds like overseas, comes from the Oldenburg region. German cattle, aged on the bone for weeks until that nutty aroma arrives.

From Upper Franconia

Metzgerei Max, Hof

Fourth generation, pasture-raised beef from the Franconian Forest, straw-bedded pigs from the region. Without them, no rib nights.

New every week

Cut of the week

Whatever special our supplier has right now ends up on René's board. Just ask.

20:15The second glass

Wine is a companion. Pleasure. Not a beverage.

From winemakers we know and stand behind. From Franconia, the Palatinate and South Africa, where we had one of the best winery experiences of our lives.

More about our winemakers

Deidesheim · Palatinate

von Winning

We stand behind these wines in particular. Chardonnay Royale, Win Win.

Stellenbosch · South Africa

Kleine Zalze

We'll never forget the tasting there. Ask Lisa for the story.

Iphofen · Franconia

Ilmbacher Hof

The Fröhlich family, since 1803. Silvaner that tastes like Franconia.

Castell · Franconia

Castell

A VDP estate in the Steigerwald: “tell me” and Silvaner from the Hohnart premier cru.

SESES DRINKS

Fruit reductions by Lars and Till: simmered down, not flavoured. That's why our alcohol-free drinks taste of fruit.

22:30The last tables

Time for small talk.

The candles have burned down, the cork wall is a little fuller again. And someone is still telling a story.

Why Lisa Marie?

For an hour, names were passed around the table. Good names. None of them felt like home.

Then someone said: “Why not simply Lisa Marie?”

Ten seconds of silence. The feeling: it's perfect!

Lisa Marie are Lisa Knorr's two first names. The logo above the door is her signature.
